Fit Foodie-ing the French

Butter makes the world go round in French cuisine, and let’s admit it… It’s not much different elsewhere. Toasts, steaks, baking…. But alas, why does it seem every time my heart sings from butter my thighs flatten out to the size of Antarctica?

Now I remember why! So I have a larger base to cry off of when I fall to the ground in reverence to the butter gods…we’ve all done that right? Oh it’s just me? Are you sure? …okay, maybe just me.

But maybe it won’t just be me hosting a new tribal celebration for this foodie victory. Get ready for it. I have a better-than-butter hack for you: savory edition.

Salmon. Toast. Eggs. Steak. And don’t even get me started on the world of roasted goodies. Squash, cauliflower, potatoes, meats…

Not gonna lie, I was about to climb Mt. Everest before I gave up my lovely butter. But before you grab your hiking gear (ah wait…good exercise much?…maybe, maybe) check out my ultimate fit hack. I present:

Avo-Dill Delight:

For when you want a creamy, luxurious, light and airy spread or sauce. Umm… Bring. It. On!

-1/4 ripe avocado

-1-3 tsps dill (fresh or freeze dried)

In a small bowl, run through the avocado a few times with the fork to start mashing. Then, work into a constant mixing/whisking motion (if you’re confused just think side to side and then add a little circular motion-hey that sounds like a dance move…bonus! So I’ve got you party-set. You’re bringing the butter hack and the dance moves. You’re welcome.) Anyways, mix until it’s pretty smooth and airy. Tip: the more you mix, the lighter and fluffier and better-than-butter it gets. But the real question: can you get it fluffier than than the unicorn in Despicable Me? Goals.

Wait. That’s it? Julia, you gave me this intense buildup and it’s just avocado?

Life pro tip #1: Never underestimate the godly avocado.

Life pro tip #2: Because it’s good friend dill will punch you out of the ring.

Yes. Avocado, dill, and a fork are up to some real witchcraft here. I promise you, try it with some smoked salmon and you’ll be so happy… You might even pull out your new dance moves.

It makes vegetables taste like pasta (more coming on this I know, I know, big promise) and it turns boring “healthy” food into a foodie’s dream. Mix with quinoa, add on top chicken, make eggs silky and creamy… That’s it. I’m leaving. I have to make some for myself.

So what’s the lesson here? There’s breaking news: there’s been a coup! Butter is dethroned. By some killer dance moves. No further questions.
